Whole green lentil with spinach can be old recipe well known for you but I get to taste it recently. I liked it so much. So many people around me and in my family they hardly tried it before. This made me share this recipe with all of you finally. It’s energy boosting as we can see from the ingredients. Keep trying new recipes. Let’s not waste any time and start with the recipe.





Ingredients
1 tablespoon vegetable oil
1 onion
1 tea spoon finely grated ginger
3 cloves garlic minced
2  tomatoes diced
2 tablespoons tomato paste
1/4 cup mixed parsley and cilantro chopped
1/2 teaspoon salt
1 teaspoon ground cumin
1/2 teaspoon dried coriander ground
1 teaspoon turmeric
1 teaspoon red chilly
1 green chilly
Black pepper grounded according to the taste
3 cups water or vegetable or chicken stock if available
1 cup whole green lentils washed and drained
5 cups fresh spinach leaves trimmed, washed and chopped
1/4 cup mixed cilantro and parsley chopped
You can add one tea spoon lemon juice if you like



Method


Take a medium-sized pot
You can directly boil lentil and spinach with spices and herbs then make Tarqa with your fav onion cumin garlic whatever you like and add tarqa to boiled mixture or simply you can fry things then add water totally up to you Incase you want to fry things here are the steps
Fry the onion and garlic with the vegetable oil until soft and turns golden.
Then add the tomatoes and paste
keep frying it until the tomatoes release all the water
 keep cooking until most of the released water is evaporated.
Add the herbs and spices
 and sauté for another couple of minutes until the mixture looks like a thick paste.
Add the stock or water and bring it to a boil
You can add spinach and lentil together if you want spinach to disappear completely

 If you want the dish to look like lentil and no leaves should be seen then add together and the dish would be like

but if you want spinach leaves to be seen then add spinach few minutes later
Add in it whole green  lentils and cover the pot.
Cook the lentils for 15 minutes until they start to soften up
 then add the spinach.
Keep the pot covered and allow it to cook for 10 minutes more until the spinach has wilted and the lentils have cooked


 Add the remaining herbs
 Taste and adjust the salt.
Serve it right away with salad and yogurt
